Pancakes are a Fam-Favorite in many homes, but so many of the recipes that are out there are full of unhealthy, processed ingredients or leave you feeling like you just ate a 5-gallon bucket of lead.  Do you agree? 

Well, pancake love doesn’t have to be that way.  In fact, pancakes can be gut-friendly, include healthier ingredients, and make you feel warm & toasty all over! Like this health-coach-approved recipe for Strawberry & Lemon Pancakes!

Yummm….Strawberries!  Few fruits make us happier than perfectly ripe, juicy strawberries. They can feel tropical and exotic or grounding and homey if you grow them in your own backyard.

Strawberry & Lemon Pancakes

Servings:  3

Prep Time:  30 Mins

Ingredients:  9

Ingredients: 

1 Egg
3/4 cup Unsweetened Almond Milk
2 tbsps Maple Syrup
2 tbsps Lemon Juice
1 cup All Purpose Gluten-Free Flour
2 tsps Baking Powder
1/8 tsp Sea Salt
1 cup Strawberries (stems removed, chopped) 1 tbsp Coconut Oil

Directions: 

1. Whisk the egg(s) in a bowl. Add the milk, maple syrup, and lemon juice and stir to combine.
2. Add the flour, baking powder, and salt. Mix until well combined. Fold in the strawberries.
3. Heat a pan over medium-high heat and add some oil. Scoop 1/4 cup of batter at a time into the pan, and cook until bubbles start to form. Flip and cook for another one to two minutes. Repeat with the remaining batter.
4. Divide onto plates and enjoy!
